What oz, mL and cups measure
In this guide, oz means U.S. fluid ounces, which measure volume. A dry ounce measures weight and cannot be converted directly into milliliters or cups without knowing the density of the ingredient.

Why the size on the label is only a starting point
Nominal capacity identifies a product format. Working capacity is the amount that can be filled, closed and handled under the intended service conditions. Those two numbers are often different.
A black coffee, latte and iced drink can all be sold as a 12 oz menu item while using the available space differently. Foam rises above the liquid. Ice displaces part of the drink. Match bowl capacity to the food, not only the number

Soup usually needs free space below the rim because liquid moves during carrying and delivery. Salad often benefits from a wider opening for toppings and mixing. Rice, noodles and pasta need enough depth for the portion without forcing the food against the lid. Ice cream and desserts may need additional space above the base product for scoops, fruit or sauces.
